Zamorano is a raw sheep's milk cheese from the province of Zamora in Castilla y León, protected under its own PDO. Made from the milk of Churra and Castellana sheep, it's the northern cousin to Manchego, cut from a similar cloth but with a bit more attitude from the local breeds and the cooler cellars.
The paste is firm and close-grained, pale ivory shading toward straw, breaking in clean shards under the knife. On the palate it leads with toasted almond and browned butter, opens into that lanolin sweetness that only aged sheep gives you, and finishes long and savory with a gentle peppery lift. The natural rind carries the zigzag pleita pattern pressed into the wheel during forming, an old-school marker of the recipe.
At six months plus, this one sits right where aged Spanish sheep gets interesting, dense enough to shave over a plate, still moist enough to eat by the chunk. If you already love a good Manchego and want to go one step further into the aged, savory end, this is the wheel.
