Zamorano is a raw sheep's milk cheese from the province of Zamora in Castilla y León, protected under its own PDO. Made from the milk of Churra and Castellana sheep, it's the northern cousin to Manchego, cut from a similar cloth but with a bit more attitude from the local breeds and the cooler cellars.
The paste is firm and close-grained, pale ivory shading toward straw, breaking in clean shards under the knife. On the palate it leads with toasted almond and browned butter, opens into that lanolin sweetness that only aged sheep gives you, and finishes long and savory with a gentle peppery lift. The natural rind carries the zigzag pleita pattern pressed into the wheel during forming, an old-school marker of the recipe.
At six months plus, this one sits right where aged Spanish sheep gets interesting, dense enough to shave over a plate, still moist enough to eat by the chunk. If you already love a good Manchego and want to go one step further into the aged, savory end, this is the wheel.
Firm and dense, breaks in clean flinty shards under the knife with a slightly oily, close-grained paste.
Full-flavored aged sheep, more assertive than a young Manchego, with a savory pull that builds as you chew.
Long, savory finish that leans nutty and slightly gamey, holding on the palate well past the swallow.
The fresh milk has dried out with age; what's left is a low buttery hum under the aged notes, not yogurty or bright.
Toasted almond and browned butter through the middle, with the classic lanolin sweetness of aged Spanish sheep.
A quiet farmyard note from the raw milk and natural rind, more dry-hay and wool than mushroomy.
A gentle peppery lift on the back palate as it ages, warming rather than sharp.
Natural rind
The natural rind carries the zigzag pleita pattern and adds a dry, slightly musty, hay-like edge to the outermost bite. Traditionally trimmed off before eating.
Zamorano stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Aged Spanish sheep loves aged Spanish reds; the tannin and dried-fruit sweetness of a Rioja meet the nutty savory pull of the cheese head-on. Amontillado bridges the salty, almond side.

The classic Iberian move: sweet quince against salty aged sheep. Marcona almonds echo the toasted-nut note already in the paste.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
