Top Italian and French cheeses, carefully selected
Domenico and his team are fantastic. I’m a chef and I often get my supplies from The Cheese Store — unique products, carefully selected, from top Italian and French cheeses to excellent local ones.

Wilde Weide is a raw cow's milk boerenkaas, a farmhouse Gouda, made by Jan and Roos van Schie on Zwanburgerpolder, an island farm in a lake in South Holland. The van Schie family has lived there since 1849. The name means "wild meadow." The family's small herd of Montbéliarde and red Friesian cows grazes the island pastures, and the cheese is made from their organic milk. The curds are washed with hot water, which draws out milk sugar and sets up the cheese's sweetness. The wheels are then pressed in a hand-cranked press, brined and aged for about 15 months. Under the wax the paste is straw yellow, with a few round eyes and flecks of crystal, and it breaks into fine, sandy crumbs that melt on the tongue. Hazelnut and butter come first, moving into butterscotch and sweet bourbon, with a grassy note carrying a long finish.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
Hand-cut to order the day it ships.
