Tomme Trois Laits is a French artisanal tomme made from a blend of three milks, cow, goat, and sheep, pressed into a semi-firm wheel and aged until a mottled natural rind forms in the cave. The name says it plainly, three milks in one wheel, and each one brings its own thing to the paste.
The paste is semi-firm and supple, breaking cleanly under the knife with a color that leans pale straw. On the palate you get the sweetness and cream from the cow's milk first, then a mineral, slightly tangy pull from the goat, and a savory, rounder finish from the sheep. Underneath all three there's a quiet hazelnut and a mushroomy note picked up from the natural rind as it ages.
