Tomme de Chèvre Grand-Mère with Black Truffle is a French pasteurized goat's milk tomme, aged a few months and shot through with black truffle. The name Grand-Mère nods to the old-style farmhouse tomme recipe, a firm goat's milk wheel with a rustic natural rind, and this version takes that base and layers in real truffle through the paste.
The paste is close-textured and smooth, breaking in clean slabs under the knife with a soft ivory color speckled with dark truffle veins. On the palate the goat's milk reads gentle and buttery up front, a quiet lactic tang underneath, then the truffle takes over, deeply earthy and mushroomy with a forest-floor pull that carries the finish. There is a whisper of brown butter from the aging that keeps everything grounded.
What makes this one worth reaching for is the balance. A lot of truffle cheeses lean too hard on the truffle or use a paste that cannot hold its own. Here the goat's milk tomme is mellow enough to let the truffle sing, but has enough character of its own to keep the cheese interesting from first bite to finish.
