Tomette Corse (or Tomme Corse) is a rustic, traditional French cheese from the island of Corsica, typically made from sheep's milk (sometimes mixed with goat's) with a firm, creamy texture and a natural, earthy rind, offering rich, nutty, slightly tangy, and grassy flavors that deepen with age, embodying the island's mountain terroir.  It's delicious on its own with rustic bread, fruits, or cured meats, and excellent melted over toast or in dishes for its rich flavor.  It complements red wines like Madiran or Castillon Côtes de Bordeaux, and whites like Alsace Riesling.
