Testun Occelli Fogli di Castagno is a farmstead cheese from Beppino Occelli in Piemonte, a raw blend of goat and cow's milk drawn from herds grazing the Alpine meadows above Cuneo. Occelli started making butter in 1976 from that same alpine milk, and the cheeses he built out from there are unmistakably his own house style.
The wheels are aged around a year and a half, then wrapped in dried chestnut leaves for a long finishing period. The paste is firm and crumbly, breaking off in shards rather than slicing clean, with a sweet nutty character running right through the middle and a toasted hazelnut note that shows off the age. On the nose, the leaves lend a woody, slightly musty perfume that pulls you in before the first bite.
What sets this one apart is that chestnut-leaf wrap. It keeps the paste moist deep into the aging, and it slowly bleeds a sweet, autumnal aroma into the rind that stays with you long after the cheese is gone. A really special wheel from one of the most respected producers in northern Italy.
