Testa Conserve belongs to the Testa family, who have fished Sicilian waters for more than 200 years, with roots in the harbor of Ognina in Catania. Bluefin tuna joined their catch of oily fish around the turn of the 1980s. The tuna (Thunnus thynnus) is caught in the Mediterranean with purse seine nets, then moved to growing tanks in the Channel of Sicily and fed only herring and sardines. From tank to freezing at minus seventy degrees takes just four minutes, and every jar carries the catch document number that traces the fish. The family packs it at its own plant in Portopalo di Capo Passero: whole fillets under cold-pressed sunflower oil in a 620 g jar, the flesh compact and tender, with the delicate, rich flavor of bluefin.
