Sunny Ridge is a pressed, washed-rind goat's milk cheese from Blakesville Creamery in Port Washington, Wisconsin. The dairy works exclusively with goat milk from their own herd, and this wheel is pressed and aged over several months for a developed rind and a semi-hard paste.
The paste is supple at room temperature, with a fine even break under the knife and a pale ivory color rather than the buttery yellow you get from cow milk. The rind is brushed and washed during aging, building a sticky pink-orange exterior with a quiet washed-rind perfume that stays well shy of stinky.
