Deep Dive

A closer look

Sainte-Maure de Touraine is a Loire Valley goat cheese made in a slender log, coated in salted vegetable ash, with a length of rye straw running down the center. That straw is the tell, it's a traditional structural trick that helps the young log hold its shape and lets the paste breathe as it ripens.

The rind blooms with a fine geotrichum mold over three to four weeks, ripening the cheese from the outside in. Under the ash you get a soft, creamy line, and the core stays a little chalky and dense, which is exactly what you want. On the palate it is bright and lactic first, with a clean citrusy tang, a light mushroomy note from the rind, and a gentle minerality from the ash that carries into a clean finish. As it ages further the paste softens toward the center, the goat character deepens, and a faint hazelnut sweetness comes forward under the rind.

Sainte-Maure de Touraine is AOP-protected and one of the classic goat cheeses of the Loire, a cheese that shows off what pasteurized goat's milk can do when the process is honored. Right in the sweet spot at three to four weeks in, chalky center and cream line intact.

The Tasting Notes

Texture

Semi-soft log with a moldy-ash rind and a paste that reads chalky at the core, softening to a creamy line just under the rind as it ripens.

Intensity

Pronounced goaty lactic tang up front, with a gentle vegetal note from the ash and straw. Confident, not stinky.

Finish

Mid-length finish, clean and citrusy, with a light minerally note from the ash that sits on the palate for a beat before fading.

Lactic

Bright fresh-goat lactic tang runs the whole length of the bite, like yogurt strained thick, clean and citrusy.

Nutty

A faint hazelnut note develops just under the rind as the cheese ripens, but the profile is lactic first.

Earthy

Light mushroomy, cellar-like note from the geotrichum bloom and the ash coat. Reads clean and vegetal rather than barnyardy.

Spicy

No real pepper or heat. A whisper of minerality from the ash is as sharp as it gets.

The Rind

Ash rind

The vegetable-ash rind blooms with a fine white-to-blue-gray geotrichum mold as it ages. Edible and part of the picture, it adds a mushroomy, mineral note that frames the bright goat paste inside.

The Pairing

What to pour. What to put alongside.

Sainte-Maure de Touraine stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Wine glass — The Sip
The Sip

Sancerre · Pouilly-Fumé · Vouvray · Champagne

  • Sancerre
  • Pouilly-Fumé
  • Vouvray
  • Champagne

Loire whites are the classic anchor, the same terroir as the cheese, and the citrus and flint in Sauvignon Blanc snap against the lactic tang. A dry Vouvray gives a softer, slightly off-dry counter for the ash-ripened rind.

Fresh fruit — The Bite
The Bite

Fresh figs · Bartlett pears · Green grapes

  • Fresh figs
  • Bartlett pears
  • Green grapes

A drizzle of pale honey plays into the sweet finish of a ripe goat log, and fresh figs or pears bring a soft, watery sweetness that carries the lactic tang.

Like wine tasting, but for cheese

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
