Grasmere Farms Scottish Cheddar is a cow's milk cheddar made in Scotland, aged in the old style with a cloth binding and a good long stretch in the cellar. The paste is firm and dense, breaking into a crumble under the knife rather than a clean slice, with the occasional crystal crunch that tells you the age is real.
On the palate it leads with a proper cheddar tang, sharp and savory, then pulls into toasted hazelnut and brown butter through the middle. There's a grassy, buttery lactic note underneath that speaks to the Scottish pasture, and the finish holds long with that peppery cheddar bite on the back end. Twelve months minimum in the cave, sometimes longer, which is where the concentration and the crystal work come from.
This is cheddar the way it used to be made, cloth-bound and cave-aged, not shrink-wrapped and rushed. Great on its own with a dram, brilliant melted into a rarebit, and it earns its place on any board that wants a proper aged cow.
