Deep Dive

A closer look

Sbrinz AOP from Alp Chüenren, made in the central Swiss Alps from raw cow's milk taken during the summer alpage. One of the oldest cheeses in Switzerland, made the same cooked, pressed, hard-paste way since well before parmesan existed.

This is a properly aged wheel, past 24 months, and you can see it in the paste. It's hard, dry, golden, and packed with tyrosine crystals that crunch when you bite into it. Don't try to slice it in neat rectangles, you want to shard it off with a hard knife the same way you would a parmesan. The flavor leans deep nutty and savory, toasted hazelnut and brown butter through the middle, with a real caramel sweetness that comes up on the finish and lingers a long time.

The 'Alp Chüenren' bottling is the alpage version, so you're getting milk from cows that were on mountain pasture all summer, which gives the cheese a little more grass and hay character than the valley-aged stuff. Aged Alpines this serious don't come through often, and Sbrinz is the original recipe that a lot of the more famous Swiss wheels eventually grew out of.

The Tasting Notes

Texture

Properly hard and dense, breaks into shards rather than slices. The paste is dry and crystalline with that crunch you get from real aged Alpine cheese.

Intensity

Big, savory, full-throttle Alpine flavor. Concentrated and sharp without tipping into pungent, this is what people mean when they say a cheese eats like an older parmesan with a Swiss accent.

Finish

Long, sweet, savory finish that sticks around for thirty seconds or more. Toasted nuts and warm butter linger on the palate well after the bite is gone.

Lactic

Most of the fresh milk is long gone after this much aging. What's left reads more like browned butter than fresh cream.

Nutty

Deeply nutty, toasted hazelnut and brown butter all the way through, with a caramel sweetness on the back end. This is the axis Sbrinz is built on.

Earthy

A faint hay and grass note from the alpage milk, but the dominant character is nutty and sweet rather than earthy or barnyardy.

Spicy

A gentle savory tingle on the back of the palate from the long age, but no real peppery bite. Sharp without being hot.

The Rind

Natural rind

Hard, dry natural rind that's been brushed and turned for years in the cave. Not really for eating, but it carries a deep savory crust where the wheel meets the air.

The Pairing

What to pour. What to put alongside.

Sbrinz stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Wine glass — The Sip
The Sip

Champagne · Riesling · Pinot Noir · Dry Sherry

  • Champagne
  • Riesling
  • Pinot Noir
  • Dry Sherry

Sbrinz is salty, nutty, and crystalline, so it wants something with acid or bubbles to lift the fat. A Swiss Pinot or a dry sherry pulls out the brown butter side.

Fresh fruit — The Bite
The Bite

Bartlett pears · Honeycrisp apples · Fresh figs

  • Bartlett pears
  • Honeycrisp apples
  • Fresh figs

The cheese is dry and savory, so a little sweet fruit or honey gives it the counterpoint it needs. Balsamic plays straight into the caramel notes that come with the age.

Honey — The Sweet
The Sweet

Acacia honey · Aged balsamic · Quince paste

  • Acacia honey
  • Aged balsamic
  • Quince paste

Like wine tasting, but for cheese

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
