Ridge Vineyards has spent more than six decades making some of California’s most respected wines, and this red wine vinegar carries the same name. The winery began on Monte Bello Ridge in the Santa Cruz Mountains, where vines were first planted in 1885 and where four Stanford Research Institute engineers revived the vineyard in 1959. Ridge became famous for a traditional, hands-off approach that lets each vineyard show its character, and its Monte Bello Cabernet earned worldwide recognition at the Judgment of Paris tastings in 1976 and 2006. The vinegar reflects that same patient philosophy. It ages for 19 years in barrel, slowly gaining depth and complexity in the wood, and is bottled unfiltered so it keeps its full body and character. The result is a vinegar with real wine character: deep, rounded and layered, with a bright but polished acidity. Use it to finish a pan sauce, dress bitter greens, brighten roasted vegetables, or splash a few drops over grilled meats or aged cheese.
