On the palate it leads with butterscotch and toasted hazelnut, then pulls into a long caramel finish with a savory pull underneath. The crystals give a little crunch on every bite, which is how you know the wheel has had the time it needs in the cave. There is a sweetness here that never tips into cloying, balanced by a quiet salt and a brown-butter depth.
This is one of those cheeses worth the splurge. Shave it thin over a salad, break it into shards for a board with dark chocolate and a glass of port, or just eat it in slivers on its own with a bourbon at the end of the night.
