Ragusano is a traditional Italian pasta filata (stretched-curd) cow's milk cheese from Sicily, known for its firm texture, rectangular block shape, and rich, savory flavor that becomes spicier with age, similar to a sharp provolone. Made from raw milk of the Modicana breed, it's historically aged by hanging from ropes and is excellent for grating, cubing for antipasto, or melting.
Try it grated over pasta, soups, and roasted vegetables, cubed for cheese boards with meats, olives, and honey, melted as a sharp alternative to provolone and even fried with vinegar and oregano.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
