This is Pyramide de Chèvre, a pasteurized goat's milk cheese from France's Loire Valley, shaped as a truncated pyramid and coated in fine vegetable ash. The shape has a story, going back to Napoleon's Egyptian campaign, when the story goes that the returning general lopped the tops off the local pyramid cheeses with his sword.
Under the soft grey ash rind, the paste is bright white and chalky at the core, with a creamier ring that develops just under the rind as it ages. The shape gives it a lot of surface area, so it ripens from the outside in, which is exactly what you want in a Loire chèvre. On the palate it reads lactic and citrusy, with that classic goat-milk tang on the front of the tongue and a soft, minerally pull from the ash on the finish.
At three to four weeks it sits right in the sweet spot: fresh enough to taste the milk clearly, aged enough to show a little character from the rind. A really lovely small-format cheese to slice across the middle and share.
Dense, chalky paste at the core with a softer, creamier ring just under the rind. Breaks cleanly under the knife with a fine, cake-like crumb.
Pronounced goaty lactic tang up front, balanced by a gentle salty-mineral pull from the ash and a soft vegetal note as the rind ripens.
Clean citrus-yogurt finish that sits on the palate for a beat, then fades into a light minerally note from the ash rind.
Very milky and yogurt-like, that classic fresh chèvre brightness right on the front of the tongue.
Not a nutty cheese. This one leans lactic and mineral, not brown-butter or toasted.
Light forest-floor and fresh mushroom notes from the ash and bloomy rind, cleaner than barnyardy.
No heat. The tang reads as citrus acidity, not pepper.
Ash rind
The vegetable-ash coating gives a soft grey bloom with faint mineral and mushroomy notes that carry the flavor from the outside in.
Pyramide de Chèvre stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Crisp, high-acid Loire whites from the same valley mirror the cheese's lactic tang and cut through the chalky paste.

A drizzle of honey or a spoon of fig jam softens the goaty edge, while fresh fruit and nuts play against the chalky core.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
