Podda aged Sardo 5 month

Podda aged Sardo (Classico Stagionato) is a popular, Italian cheese from Sardinia, made by Ferruccio Podda with a blend of pasteurized cow and sheep's milk, aged at least 5 months.  It's flavor profile is savory, aromatic, with hints of butter, sweet milk, and a pleasant tang, not overly sharp.  Great as a table cheese with bread, fruit, or salami, and also good for grating over pasta.
