Pago de los Capellanes sits just outside the village of Pedrosa de Duero, in the Burgos stretch of Spain's Ribera del Duero. The estate is named for the local chaplains who, beginning in the 15th century, were paid in vineyard land for saying masses and prayers. Those same parcels are now farmed by the Rodero-Villa family, who laid the winery's foundation stone in 1996. They work only with Tinto Fino, the region's own strain of Tempranillo, grown at around 800 meters on poor clay-limestone soils that make the roots dig deep. They split their vineyards into dozens of separate plots so each one can be fermented and judged on its own. Their 'Joven' (sold as Joven Roble) is the estate's youngest red. It spends five months in 300-liter French oak barrels, just enough to round out its bright cherry fruit while keeping the freshness of a young Ribera. It's a lively, approachable bottle from one of the region's most respected modern producers, made to be opened tonight alongside cured meats, aged Manchego or the region's famous lechazo asado, milk-fed lamb roasted in a wood-fired oven.
