Ossau-Iraty from the Pyrenees on the French side of the Basque Country, aged six months and protected under AOP since 1980. Made from raw sheep's milk (Manech and Basco-Béarnaise breeds), pressed and uncooked, with a natural rind that ages up dusty and firm.
At six months, the paste is dense and ivory, breaking into clean flakes rather than slicing smooth. Flavor is where this cheese earns its reputation: toasted hazelnut, browned butter, and that unmistakable sweet sheep's milk pull, with a soft grassy note underneath from the mountain pastures. It's not a stinky cheese, not a sharp cheese, just deeply savory and a little sweet on the finish.
A great entry point for people who think they don't like sheep's milk, and a benchmark for people who already do. One of the oldest cheese recipes in Europe, and still one of the most quietly beautiful ones on the counter.
Firm and pressed but not dry — breaks into clean flakes under the knife with a smooth, dense paste that softens on the tongue.
Mellow but pronounced. Nutty and buttery up front, a little grassy through the middle, with the quiet sheep-milk sweetness that defines a real Ossau-Iraty.
Clean sheep's milk sweetness that holds through the mid-palate and fades on a light hazelnut note.
A gentle yogurty tang from the raw sheep's milk, more buttery than sharp.
Toasted hazelnut and browned butter carry the flavor, classic to a six-month Pyrenean sheep cheese.
A quiet grassy, hay-like note from the mountain pastures, sitting under the nuttiness rather than out front.
No real heat or bite — the finish stays sweet and buttery.
Natural rind
Natural rind, dusty gray-brown and firm. Not typically eaten, but it adds a faint cellar and toasted-grain note to the paste right underneath.
Ossau-Iraty stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

The wines of the Basque and Béarn regions — Irouléguy reds and off-dry Jurançon — are the local logic. The sweet-savory pull of the cheese also loves a Rioja or a glass of dry cider.

The traditional Basque move is a spoon of black cherry jam from Itxassou alongside the cheese. The sweet-tart fruit lifts the nutty sheep's milk without covering it.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.

Hand-cut to order the day it ships.
