Onetik has been making cheese in Macaye, a small village at the foot of the Pyrenees in the heart of French Basque Country, since 1982, collecting milk from a cooperative of local farmers who still practice transhumance — the traditional seasonal movement of herds to mountain pasture — to keep the dairy rooted in the region's oldest cheesemaking customs. The dairy earned wide recognition in 2001 with the original Bleu des Basques, a sheep's-milk blue that won an international patent and a gold medal at the Paris Agriculture Fair as the first blue cheese of its kind from the Basque Country; this Pur Chèvre version applies that same technique and know-how to 100% goat's milk instead, extending Onetik's blue-cheese tradition into a style historically less common in the region. Wrapped in a natural rind and aged for roughly two months, it develops a semi-firm, creamy interior laced with fine blue veining — milder and less assertive than most blues, with a delicate, faintly sweet, nutty character that makes it an approachable entry point for those new to goat's-milk blues.
