This is the Old Quebec Reserve, a Canadian white cheddar aged a minimum of seven years and made from the milk of cows grazing in the Saint Lawrence River Valley. The paste is firm and dense, pale ivory, and breaks into clean crumbly shards under the knife, shot through with the fine crystalline crunch of tyrosine that only comes with this kind of aging.
On the palate it leads with a real sharp cheddar bite, peppery and concentrated, and then pulls into toasted hazelnut and brown butter through the middle. Underneath the sharpness there's a savory umami depth and a quiet sweetness on the long finish that keeps the cheese from feeling one-note. Seven years is a long time for a cheddar to hold together this well, and what you taste is the concentration, more salt, more nut, more crunch from the crystals as the paste tightens.
This is a sharp cheddar in the proper sense, made for people who want their cheddar to actually taste like something.
Firm and dense with a crumbly break under the knife, dotted with the fine crystalline crunch of tyrosine that comes with this kind of aging.
Big sharp cheddar attitude, the salt and umami carry the bite while a toasted nuttiness pulls underneath.
Long savory finish that holds on the palate, sharp up front and slowly fading into a nutty, slightly sweet pull.
Most of the fresh-milk character has dried out over seven years of aging, leaving only a faint buttery echo behind the sharpness.
Toasted hazelnut and brown butter through the middle, classic of a properly aged cheddar where the protein has had time to break down.
A quiet savory depth sits underneath the sharpness, more umami than mushroomy.
A real cheddar bite on the back of the palate, peppery and sharp without crossing into harsh.
Waxed rind
Sold in cut pieces from a waxed block, rind is inedible.
Cheddar stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Seven years of sharpness wants something with its own weight, a tawny port or a barrel-aged stout has the sweetness and depth to meet the cheese on its own terms.

Sharp aged cheddar wants fruit sweetness and a little acidity to balance the salt and the bite, fig jam or sliced apple does the work.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
