Old Quebec is a Canadian cow's milk cheddar from the province of Quebec, aged a minimum of three years. The recipe follows the classic cheddaring process, where the curds are stacked and pressed to drive the pH down, which is where cheddar gets its signature tang and sharpness.
The paste is firm and dense, breaking into clean shards under the knife with a fine crystalline crunch from the three years of aging. On the palate it opens with a bright cheddar tang, then pulls into butterscotch and brown butter through the middle before a long, sweet-savory finish that sticks around. That butterscotch note is the calling card of a cheddar that's been pushed past the two-year mark and held its moisture.
Three-year cheddars are a sweet spot, sharp enough to carry a cheese board on their own, but still moist enough to grate over a baked potato or melt into a sauce. A real cheddar, the old school way, with the crystals and the crunch to prove the age.
Firm and dense, breaks into clean shards under the knife with a fine crystalline crunch from the three years of aging.
Bold and assertive, with the sharp tangy bite that defines a properly aged cheddar and a long savory pull underneath.
Long and lingering, the butterscotch sweetness and tangy sharpness hold on the palate well past the swallow.
The fresh-milk character has dried down over three years; what's left reads more as concentrated cream than yogurt or butter.
Brown butter and a butterscotch sweetness run through the middle, a hallmark of cheddar pushed past the two-year mark.
A quiet savory depth sits underneath the sharpness, but this is a clean aged cheddar without barnyard or mushroom notes.
A bright tangy sharpness on the front of the palate, the cheddar bite, without crossing into peppery heat.
Waxed rind
Cheddar stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

The sharp tang and butterscotch depth want a drink with body and a little sweetness. Port and bourbon meet the caramel notes head-on, while a stout or cider cuts through the salt.

Cheddar loves a green apple hit, the acidity bounces off the sharpness. Fig jam and quince bring sweetness to balance the salt.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
