Old Amsterdam is a pasteurized cow's milk Gouda from the North Holland tradition, aged well past the point where most Goudas call it done. That extra time in the aging room is what defines it. The paste tightens up into something dense and dry, breaking into clean shards under the knife rather than slicing smoothly, and shot through with the little white tyrosine crystals that tell you the cheese has done its work.
On the palate it leans deep and sweet. Toasted hazelnut and browned butter run through the middle, with a butterscotch note that comes on strong and holds. There's a savory sharpness on the back palate, but nothing biting, and the finish lingers long after the crunch is gone. Bold, nutty, and unmistakably aged.
