OG Ghoast is an artisanal aged Gouda from Belgium, made with goat's milk and enriched with fresh cow's cream before it heads into the aging room for about 24 months. That cream addition is the whole trick here, it gives the paste a richer, rounder texture than a straight goat's milk Gouda would carry on its own.
The paste is firm and dense, breaking into clean flaky shards under the knife with the occasional crunch of crystal from the long age. On the palate it leads with sweet caramel and butterscotch, then pulls into a savory finish that lingers well past the swallow. The goat's milk gives it a quiet tang underneath the sweetness that keeps the cheese from ever feeling one-note.
This sits right in the sweet spot for aged Gouda lovers who want something a little different from the usual cow's milk version. Shave it over a salad, work it into a cheese course, or just eat it in slabs off the board.
Firm and dense like an aged Gouda, breaks into flaky shards under the knife with the occasional crunch of crystal from the long age.
Sweet and concentrated, with caramel and butterscotch leading the palate and a long savory pull underneath from the goat's milk.
Long sweet finish, butterscotch and toffee sticking around well past the swallow.
The added fresh cow's cream lifts the paste with a buttery richness through the middle, even after two years of aging.
Browned-butter and toasted-caramel notes typical of a well-aged Gouda, with a hint of butterscotch fudge.
Mostly clean and sweet, with just a quiet savory depth underneath rather than any mushroomy or barnyard character.
Gentle, no real bite — the long age gives a touch of savory sharpness on the back end but stays mellow.
Waxed rind
Gouda stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Aged Gouda with caramel and butterscotch wants something with brown-sugar depth — fortified wines and dark Belgian ales mirror the sweetness without overwhelming the goat's milk tang.

Sweet condiments and ripe fruit echo the caramel and butterscotch notes in the paste and balance the savory pull of the aged goat's milk.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
