Nevat is a soft-ripened goat's milk cheese from Catalonia, made by Josep Cuixart at Can Pujol and named for its snowy white bloomy rind (nevat means snowy in Catalan). It's a small format cheese built to be eaten young, when the paste is still delicate and the rind has just settled into its powdery bloom.
The paste is soft and yielding, with a cream line developing just under the rind and a lightly chalky core that softens toward the edges as the wheel ripens. Made from pasteurized goat's milk, it leads with clean fresh dairy, that bright lactic tang you want from a good goat, then opens into a soft citrus and herbal lift with a quiet mushroomy whisper from the rind. Nothing loud, nothing barnyardy, just really well made.
This is one of those cheeses where the ripeness is the whole story. Young, it's chalky and lemony. A few weeks on and the cream line takes over and the whole thing turns spoonable near the rind. Either way it's a lovely example of what Catalan goat cheesemakers are doing quietly and well.
