Moser Screamer comes from Ueli Moser, an inventive Swiss cheesemaker from a cheesemaking family who left behind the Emmentaler his region is known for to make soft, cream-enriched cheeses. Switzerland is famous for big wheels aged six months or more, so a triple crème like this is rare there. Moser enriches pasteurized cow's milk with cream, bringing the butterfat to the 72–75% range that defines the style, then forms it into small wheels. Each wheel develops a thin, edible bloomy rind as the white mold ripens the paste from the outside in. The cheese is ripe within weeks and flown to the U.S. to keep it fresh. The paste is dense and silky, a little more compact than most triple crèmes, with notes of crème fraîche, mushroom, and cultured butter balancing its richness. Screamer won an innovation award in Switzerland, where it's sold under a different name, before its U.S. importer gave it the name it carries here.
