Monte Enebro is a pasteurized goat's milk cheese from Castilla y León in Spain, shaped into a long elongated log and coated in a bluish-grey bloomy rind. What makes it unusual is the mold on the outside. Instead of the white Penicillium candidum you'd expect on a bloomy goat, the rind is inoculated with Penicillium roqueforti, the same mold that runs through Roquefort. That single choice sends the whole cheese in a different direction.
The paste is a study in contrasts. Right under the rind you get a soft, yielding creamline, and the closer you get to the core the chalkier and denser it becomes, breaking cleanly under the knife with a fresh lactic snap. Flavor follows the same arc: bright citrusy goat's milk yogurt in the middle, then a peppery, mushroomy pull off the rind that carries a long savory finish. Aged only about three to four weeks, but it drinks older than that thanks to how actively the rind works on the paste.
Monte Enebro is one of those cheeses that changes the way people think about goat's milk. It sits somewhere between a fresh chèvre and a young blue without really being either, and it is genuinely hard to find another cheese doing the same thing.
