Tomme de Savoie is a pressed, uncooked cow's milk cheese from the Savoie and Haute-Savoie in the French Alps, protected by IGP since 1996. It began as a farmhouse cheese, made from the skimmed milk left over once the cream had gone to butter. This one is matured by Mons Fromager Affineur in Saint-Haon-le-Châtel, near Roanne, the family house run by Hervé Mons, a Meilleur Ouvrier de France, and his brother Laurent. The young wheels reach the Mons cellars at three to four weeks old and spend another four weeks there. That time builds a thick, rustic crust, mottled brownish-gray and alive with mold, over a tender, open, golden paste that gives softly under the knife. It smells of damp cave and cheesecake, and the flavor is mild and earthy, finishing with a gentle tang.
