Minuet is a soft-ripened, bloomy-rind cheese from Andante Dairy in California, made from a blend of cow and goat milk. Soyoung Scanlan is the cheesemaker behind Andante, and she names her cheeses after musical terms, which fits, because this is a gentle, composed little thing.
The rind is thin, white, and velvety. Under it the paste is pale ivory, soft, and almost spoonable when it's ripe, spreading across the knife the way a really good triple-crème does. The cow's milk gives it a cultured-butter richness and the goat milk brings a bright, yogurty tang up on the front of the tongue, so you get that fresh-cream lactic pull first, then a whisper of mushroomy sweetness from the rind, and a clean, buttery finish that fades quick.
This is a cheese for people who love the freshness of a really young chèvre but want the creaminess of a bloomy-rind. It's a small-format American original from one of the most quietly excellent producers on the West Coast, and it's right in the sweet spot right now.
