Manchego Vega Mancha Añejo is a pasteurized sheep's milk cheese from Castilla-La Mancha in Spain, aged over a year to earn the Añejo designation under the Manchego DOP. The paste is firm and dense, a deep straw color that breaks into clean shards under the knife with the occasional crystalline crunch. The rind still carries the traditional esparto-grass basket weave pattern pressed into the wheel during shaping.
On the palate it opens with concentrated sheep's milk sweetness and roasted almond, then pulls into a long savory finish with browned butter and a quiet peppery lift on the back end. The extra time in the cave is what you taste, more concentration, a drier bite, and that tyrosine crunch that only comes with age. There's a salty, lanolin depth underneath that's the calling card of a properly aged Manchego.
This is a benchmark Spanish sheep's milk cheese and the Añejo tier is where it really shows off, a full step up from the younger curados in intensity and texture.
