The paste is smooth, supple, and pale ivory, shot through with those signature large holes. Flavor is mild and sweet up front, with a soft hazelnut and fresh-cream pull through the middle and a clean, short finish. It sits in the same neighborhood as a baby Swiss or a young Jarlsberg, gentler than a long-aged Emmental, and it melts beautifully, which is really where this cheese earns its keep.
