This is Maison Le Gall's beurre de baratte doux, an unsalted cultured butter from Brittany made the traditional way in a rotating wooden barrel churn. The cream is French, pasteurized, and matured with lactic cultures for 15 to 18 hours before it ever hits the barrel, which is where the deep cultured character comes from.
The texture is dense and plastic on the knife, almost waxy, then it melts on the palate into pure fresh cream with a soft yogurty tang running underneath. Unsalted, so the milk is doing all the talking. You get that Breton pasture-dairy sweetness up front, a lactic bloom through the middle, and a clean, coating finish that lingers just long enough to make you want another bite.
This is a butter for people who take butter seriously. Spread it thick on a warm baguette with a pinch of fleur de sel across the top, cold-stack it on radishes the way they do in Paris, or use it to finish a pan sauce and watch it go noisette. Right in the sweet spot for anyone building a proper French breakfast at home.
Dense and spreadable, with the plastic, almost waxy chew that comes from slow barrel churning rather than a continuous line. Melts on the palate into pure cream.
Gentle and clean up front, with a slow bloom of cultured cream through the middle. Unsalted, so nothing sharpens the edges, just pure Breton dairy character.
A soft, cultured-cream finish that coats the palate and lingers for a beat, with a light yogurty tang from the 15 to 18 hour maturation.
Deeply lactic. Fresh cream, a touch of yogurt tang, sweet milk on the finish. This is the whole point of a baratte butter, and Le Gall pushes the milky note about as far as it goes.
A faint browned-cream note in the background, more sweet than nutty. Melt a knob in a hot pan and it turns properly hazelnutty as noisette.
Not an earthy butter. Clean pasture dairy, no funk, no barnyard.
No heat, no bite. Unsalted and mellow all the way through.
None rind
No rind. This is a fresh churned butter.
Beurre de Baratte stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Bright, high-acid whites and dry cider cut through the fat and lift the cultured-cream note without fighting it. Champagne is the classic move with a fresh baratte butter and good bread.

Unsalted baratte butter is the classic French breakfast move: a thick smear on a warm baguette with a pinch of fleur de sel across the top. The same butter cold-stacked on radishes is a Parisian bistro staple.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
