La Dama Sagrada

La Dama Sagrada ("The Sacred Lady") is a Spanish, hard, raw Murciana goat's milk cheese from the Castilla-La Mancha region, aged at least six months to develop a sweetness balanced with grassy, nutty, toasted coconut, and caramel notes, plus a spicy or tangy finish, often compared to Manchego but with a distinct goat's milk character and protein crystals.  Pairs well with sherry, dry red wines (Tempranillo), Marcona almonds, and rich porters.
