True to that lineage, Jean-Grogne is built by folding crème fraîche into local cow's milk, then hand-ladled into its molds with the same gentle, unhurried technique Rouzaire has used for decades rather than mechanized pressing, a method that protects the delicate curd structure responsible for the cheese's signature meltingly soft, spoonable texture. Aged briefly under a thin, bloomy white rind, it opens to a rich, buttery, faintly tangy interior that all but dissolves on the palate — an indulgent, luxurious style best served simply, with crusty bread or a glass of Champagne.
