Jasper Hill's Harbison is a soft-ripened, bloomy-rind cheese from the Jasper Hill Farm in Vermont, made from pasteurized cow's milk and wrapped in spruce bark. It has a creamy, spoonable texture and a complex flavor profile that includes woodsy, earthy, and sweet notes, often with hints of mustard, mushrooms, or garlic butter. The bark is not meant to be eaten but serves to hold the cheese together as it softens and imparts flavor. To serve, cut off the top of the rind and spoon out the creamy interior, much like a dip. When the cheese is younger, the bark can be peeled away to slice and portion it. It pairs well with crusty bread, fruit mostarda, and light- to medium-bodied alcoholic beverages, such as a lightly oaked Chardonnay, sour beer, or sparkling wine.
