A robiola from the Cuneo area of Piedmont, built on the local tradition of blending three milks in one wheel: cow, sheep, and goat. Small breeders and cheesemakers make it artisanally from whole milk, with a raw, unpressed paste that is dry-salted and aged about fifteen days.
The paste is soft and white under a thin, straw-grey bloomy rind, spoonable at room temperature. The cow's milk carries the sweetness and body, while a light sheep and goat note lifts it into something more interesting than a plain cream cheese, with a gentle lactic tang on the finish. This is a fresh cheese, so it lives on freshness, and this one is right in that window.
A delicate, easygoing robiola for anyone who wants the three-milk Piedmontese style in a small format.
Soft, spoonable paste with a straw-grey bloomy rind, giving under the knife with a fresh, milky pull.
Gentle overall, with light sheep and goat notes lifting a fundamentally milky, cow-forward base.
A short, clean finish with a slight lactic tang that fades in a few seconds, keeping it easygoing on the palate.
Fresh cream and yogurt through the middle from the young paste and the three-milk blend, brightly milky front to back.
A soft buttery note from the whole-milk paste, without the browned or hazelnut depth of an aged cheese.
A quiet vegetal, mushroomy whisper from the bloomy rind, more suggestion than statement.
No heat, no bite, just a slight acidity on the finish.
Bloomy rind
Straw-grey bloomy rind that adds a delicate mushroomy note and a touch of vegetal character around the edge of the paste.
Robiola Tre Latti stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Fruity whites and light beers keep the register bright and let the delicate sheep and goat notes read through without covering the milky paste.

Soft sweet preserves and fresh fruit lean into the young, milky character of the paste, echoing the sweetness of the cow's milk while the acidity balances the lactic tang.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
