Deep Dive

A closer look

Gruyère AOP from Switzerland, aged 18 months as a Reserva. Raw cow's milk, brine-washed natural rind, hard cooked-curd paste in the classic Alpine mold.

At 18 months, this one is right in the sweet spot. The paste is firm and dry with a scatter of tyrosine crystals through it, and it breaks with that clean snap you want from a proper aged Gruyère. Flavor leans deep and savory: toasted hazelnut, browned butter, a little onion-broth sweetness, and a mushroomy pull off the washed rind. There's a whisper of barnyard from the raw milk, but nothing loud. Everything is balanced, dialed in, and long on the palate.

This is the Gruyère you reach for when you want the real thing at full maturity. Grate it into a fondue, shave it onto a salad, or cut a thick piece and eat it standing at the counter. In a class of its own.

The Tasting Notes

Texture

Firm and dense, breaks with a clean snap under the knife. The paste is dry enough to flake yet still smooth on the tongue, with a scatter of tyrosine crystals giving that little crunch you want in a proper aged Gruyère.

Intensity

Bold and savory, with the deep nutty pull that comes with an 18-month age. Not shy, but still balanced — the salt, the browned butter, and the light barnyard from the washed rind all speak at the same volume.

Finish

A long, savory finish that holds on the back of the palate for a good while. Toasted hazelnut and a hint of onion-broth sweetness linger and ask for another bite.

Lactic

The fresh milk notes have mostly cooked down after 18 months, leaving just a whisper of cultured cream underneath the aged flavors.

Nutty

Serious brown-butter and toasted hazelnut through the middle, with that classic Alpine umami pull. This is where an 18-month Gruyère earns its keep.

Earthy

A gentle mushroomy note from the brine-washed rind runs through the paste, plus a light hay and cellar character from the long aging.

Spicy

A faint peppery tickle on the back end, more warmth than heat. Nothing sharp, just a little lift at the finish.

The Rind

Washed rind

Natural brine-washed rind, tan and rustic. It carries a mushroomy, slightly barnyardy note that grounds the sweeter, nutty paste. Edible but firm — most folks trim it.

The Pairing

What to pour. What to put alongside.

Gruyère stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Wine glass — The Sip
The Sip

Champagne · Riesling · Dry Sherry · Pinot Noir

  • Champagne
  • Riesling
  • Dry Sherry
  • Pinot Noir
  • Farmhouse Cider

The bubbles and acid in Champagne or a dry Riesling cut through the richness, while a nutty amontillado sherry echoes the browned-butter notes. A lighter Pinot Noir or dry cider works too, matching the savory pull without steamrolling it.

Fresh fruit — The Bite
The Bite

Bartlett pears · Honeycrisp apples · Fresh figs · Green grapes

  • Bartlett pears
  • Honeycrisp apples
  • Fresh figs
  • Green grapes

Crisp fruit and a drizzle of honey lean into the natural sweetness of the aged paste, while cornichons and mustard cut the richness and echo the savory, brothy side of a proper Alpine.

Like wine tasting, but for cheese

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.

Excellent customer service on a shipped order

Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
