At 18 months, this one is right in the sweet spot. The paste is firm and dry with a scatter of tyrosine crystals through it, and it breaks with that clean snap you want from a proper aged Gruyère. Flavor leans deep and savory: toasted hazelnut, browned butter, a little onion-broth sweetness, and a mushroomy pull off the washed rind. There's a whisper of barnyard from the raw milk, but nothing loud. Everything is balanced, dialed in, and long on the palate.
This is the Gruyère you reach for when you want the real thing at full maturity. Grate it into a fondue, shave it onto a salad, or cut a thick piece and eat it standing at the counter. In a class of its own.
