The fruit is farmed under practicing organic methods, and in the cellar Jordan takes a gentle, hands-off approach: fermentation relies on native yeast with 25% whole cluster, and the wine ages 14 months sur lie in just 10% new French oak before being bottled unfined and unfiltered.
