These squids in olive oil are sourced from the prestigious fish markets in the ports of the Galician Rías (estuaries) in Northwest Spain, an area known for nutrient-rich, cool waters and excellent seafood.  They are considered a traditional Spanish tapa and can be served simply with crusty bread and a glass of wine, or as part of a larger dish like rice or pasta.
