Havarti is a Danish semi-soft cow's milk cheese, washed-curd, aged a couple of months and rindless. Pale ivory paste, supple under the knife, dotted with small irregular openings from the washed-curd make where warm water rinses the lactose out and leaves a soft, pliable texture behind.
The flavor is gentle and buttery, with a light lactic tang on the finish and a clean, quick fade. Not a lot of funk, not a lot of age, just fresh cream and a whisper of something like a squeeze of lemon on the back end. It slices clean, melts beautifully, and behaves itself on a sandwich or a board without dominating anything around it.
Just because it's mild doesn't mean it's not flavorful. This is the cheese to reach for when you want something soft, milky, and easygoing, the one that keeps its head down and lets the rye bread and the mustard do their thing. A quiet workhorse of a Danish table cheese.
