This is Hook's Five-Year Cheddar, made in Mineral Point, Wisconsin by the Hook family, one of the longest-running cheddar makers in the state. All cow's milk, pasteurized, block-aged in wax for a full five years.
At five years, the paste is dry, dense, and shot through with tiny crunchy pockets of calcium lactate, right in the sweet spot where cheddar starts to eat a little like a grana. Break off a piece and you get that flake, then the sharpness lands: big salt up front, a toasted browned-butter note through the middle, and a peppery bite that builds on the back of the palate. Sharp is the headline, but there's real depth behind it. Nothing one-dimensional about this cheddar.
Five years is a long hold for a Wisconsin cheddar, and not many wheels come out the other side this well-balanced. Right in the sweet spot for anyone who thinks their favorite sharp cheddar could go harder.
