Challerhocker

Challerhocker is a Swiss, hard cheese that is aged for at least 10-12 months. It's made from cow's milk, thermalized (not raw) or pasteurized, and has a rich, nutty flavor with notes of caramel, roasted onion, and brown butter. The cheese is washed in brine and spices, and has a dense, smooth texture.  If you're a fan of Curb Your Enthusiasm, this is VANDERDONK!!!
