This is the Mozzarella di Bufala Campana DOP from Caseificio Il Casolare, a family dairy in Alvignano in the province of Caserta, just north of Naples. The buffalo herds are a few kilometers from the dairy and the cheese is made fresh every single day under the rules of the Bufala Campana consortium, from whole fresh buffalo milk pulled that morning.
The recipe is pasta filata, meaning the curd is stretched by hand in hot water until it turns glossy and layered, then shaped into 125g balls and set into its own light milky brine. Cut into it and you see the layers pull apart, a small pool of sweet whey running out. The texture is soft and yielding with real spring to it, and the flavor is exactly what fresh buffalo milk is supposed to taste like, rich cream and a light yogurty tang, sweet and clean with a short milky finish.
Buffalo mozzarella is one of the most imitated cheeses in the world and a real DOP wheel is a different animal. This is nice and fresh right now, right in the sweet spot for a caprese with a good tomato and a little sea salt.
