On the palate it leads with a clean goaty sweetness, then salt builds through the middle and the flavors stretch out the longer you chew. There's a light browned-butter note from the aging, a quiet hay and dried grass character underneath from the Tuscan pasture, and just a gentle peppery lift on the finish. Long-aged goat cheeses like this are rarer than their sheep and cow cousins, and Caprone is a good example of what the milk can do when it's given real time.
The rind is natural and rustic, adding a little earthy salinity that frames the sweeter paste. Right in the sweet spot for a cheese that wants a drizzle of acacia honey and a ripe fig alongside it.
