Sofia is a pyramid of pasteurized goat's milk cheese from Capriole in southern Indiana, layered with fine vegetable ash between three tiers of paste. Judy Schad's herd has been at the heart of American artisan goat cheese for decades, and Sofia is one of the cheeses that put the dairy on the map.
Under the downy bloomy rind, the paste ripens from the outside in, giving you a soft cream line that hugs the ash layer and a chalkier, brighter core toward the center. The flavor leads with a clean lemony goat-milk tang, then a mushroomy note from the rind pulls through, with a faint vegetal lift where the ash cuts across each tier. It reads gentle and lactic rather than barnyard, the kind of goat cheese that wins over people who think they don't like goat cheese.
Best eaten at room temperature so the cream line loosens and the rind opens up. This is a cheese that rewards patience on the counter and a sharp knife at the table.
Sets soft under the knife with a delicate bloomy rind giving way to a cream line, and a chalky, lactic core toward the center.
Bright goat-milk tang leads, with a mushroomy pull from the rind and a clean vegetal edge from the ash line running through the paste.
Finish holds for a moment on the sides of the tongue, a lemony lactic note that fades into a soft mushroom echo.
Pronounced fresh-cream and yogurty goat tang, citrusy and clean rather than barnyard.
A gentle buttered-almond note where the rind meets the paste, not the dominant beat.
Mushroomy from the bloomed rind with a soft forest-floor lift from the ash layers.
No peppery bite; the cheese reads gentle and lactic throughout.
Ash rind
The bloomy white rind is thin and edible, adding a mushroomy, buttered-toast note that frames the lactic paste. The ash layers between the tiers show as thin dark lines and contribute a faint vegetal, cellar-like quality.
Sofia stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Bright, mineral whites and dry sparkling wines mirror the citrusy goat-milk tang and cut through the bloomy-rind cream.

A little honey or fig jam softens the lactic tang, and crisp orchard fruit gives the paste something clean and juicy to lean into.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
