Bra Tenero DOP is a raw cow's milk cheese from the province of Cuneo in Piedmont, aged a minimum of 45 days under the strict DOP discipline. "Tenero" means tender in Italian, and that's exactly what you get in the paste. Soft, elastic, ivory-white, with a scatter of small uneven "eyes" running through it and a thin, dark-yellow natural rind on the outside.
The flavor is gentle and milky, with a clean fresh-cream sweetness up front and a short, lactic finish that doesn't linger long. Just because it's mild doesn't mean it's not flavorful. There's a real cow's milk sweetness here, the kind that comes from the alpine pastures around Cuneo, and it's the reason Piedmontese cooks reach for it when they want a fondue that melts smooth without turning stringy.
