This is the Roscoff Onion butter from Maison Bordier, the artisan beurrier working out of Saint-Malo in Brittany since 1985. The cream is cultured and then hand-malaxed on a wooden wheel, a technique unique to their atelier that gives the butter its signature pliable, silky texture straight out of the fridge.
The Roscoff onion is the pink AOP variety grown a couple hours west along the Brittany coast, prized for how sweet it stays without turning sharp. Folded into the fresh butter, it hums through the cream in a gentle savory-sweet way, more toasted-allium than bite, with the cultured tang doing all of the lift underneath. Spread it on a warm baguette and you get that fresh-yogurt front, a slow onion sweetness in the middle, and a clean finish that fades before it overstays.
A finishing butter in the true sense, the one you pull out for a table of good bread, seared scallops, or a plate of roasted potatoes when you want the fat to be the point.
