The Tasting

How it lands on the palate

Aged Loire Valley goat cheese with a wrinkly rind, chalky paste, and bright lemony tang. Pairs beautifully with Sancerre.

La Bonde d'Antan (200g) tasting profile
Deep Dive

A closer look

A pasteurized goat's milk cheese from the Loire Valley, shaped as a small barrel under a wrinkly geotrichum rind. Classic Loire chèvre territory.

The paste is chalky through the center with a thin cream line just inside the rind that softens as the cheese ripens. On the palate it opens with a bright lactic tang, lemony and yogurty, then pulls into a gentle almond-skin nuttiness on the finish. The wrinkly rind adds a light mushroomy lift without going barnyardy. Just because it's a gentle cheese doesn't mean it's not flavorful, the goaty signature is right there, just dialed in rather than turned up.

This one sits right in the sweet spot of the aged chèvre category, expressive enough to anchor a plate, approachable enough for someone still warming up to goat's milk.

The Tasting Notes

Texture

Chalky core under a wrinkly geotrichum rind, with a thin cream line just inside the bloom that softens as it ripens.

Intensity

Bright goaty tang up front with a lemony pull, then a mellow nutty finish. Confident but not loud.

Finish

A clean citrus and chalk finish that holds for a beat, with a light nuttiness that fades cleanly.

Lactic

Pronounced lactic tang, yogurty and citrusy on the front of the palate, classic Loire chèvre signature.

Nutty

A soft nuttiness sits underneath the lactic brightness, more almond skin than toasted hazelnut.

Earthy

A light mushroomy note from the wrinkly geotrichum rind, gentle rather than forest-floor.

Spicy

No real heat or piquancy, the bite here is acidic rather than peppery.

The Rind

Bloomy rind

Wrinkly geotrichum rind, edible and lightly mushroomy, adds a vegetal lift to the lactic paste underneath.

Like wine tasting, but for cheese

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.

Excellent customer service on a shipped order

Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
