Big Sky Grana is a cave-aged grana-style wheel made by Willi Lehner of Bleu Mont Dairy in Blue Mounds, Wisconsin. Willi calls himself a nomadic cheesemaker, sourcing milk from herds around the area, producing the wheels at partner dairies, and bringing them back to his own cave to rest. Built on the same recipe lineage as Parmigiano-Reggiano, this is a super rare cheese, the kind we only get a wheel of a year.
The paste is dry, dense, and loaded with tyrosine crystallization, so it breaks off in flaky shards instead of slicing clean. Flavor is super caramelly, super sharp, with a deep toasted-hazelnut and burnt-caramel pull that runs through the middle and lingers on the finish. There is a quiet cave-aged earthiness underneath the nuttiness, the kind of mineral note that tells you the wheel sat long enough to earn its sharpness.
This sits right in the sweet spot for an American grana. It does everything a long-aged Parmigiano does, with its own Wisconsin signature pressed into the rind. Shave it over a salad, snap off chunks for a board, or grate it into a pasta where you want the crystals to crunch through.
