Beurre d'Isigny is the benchmark cultured butter of Normandy, made from cream collected in the Baie des Veys marshlands where the Cotentin and Bessin rivers meet the sea. The pasture there is unusual, fed by five rivers and salted by ocean spray, and the cows grazing on it give milk high in fatty acids that carries straight through into the butter.
The cream is matured with live cultures before it's churned, which is what gives Beurre d'Isigny its signature tang. On the palate it's dense and waxy at fridge temperature and turns almost whipped once it warms up, with a bright yogurty front, a soft hazelnut note through the middle, and a long dairy finish that lingers well after the fat has melted away. Deeply lactic, quietly nutty, and much more assertive than a sweet-cream butter.
